Baked Oatmeal
- 3 cups rolled oats
- 1 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/2 cup melted butter
- 2 teaspoons vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Spread into a 9x13 inch baking dish.
- You may add anything additional you like ie. walnuts, cranberries, etc. I peeled and cut up small bites of apples and it was delicious.
- Bake in preheated oven for 40 minutes. You may cut it into squares or scoop it out.
Becky, does this turn out more like a cake then? I think we would like this! Adding the apples or some golden raisins/walnuts would make it even more yummy! Thanks for sharing!
ReplyDeleteYou can cut it like a cake or scoop it out, your choice. We like to scoop it. If I would have cooked it a little longer it would have been stiffer to cut like cake.
