Ice Cream Jello

Ice Cream Jello

2 boxes of strawberry jello
1 cup of boiling water
1 2# can of crushed pineapple and juice
1/2 cup nuts (optional)
1 quart of vanilla ice cream (let set out to soften slightly)

Mix jello and boiling water together, then mix in the pineapple and ice cream.  Place in a 9X13 casserole dish, and place in the refrigerator to set.  It takes about 1 1/2 hours to set.  I usually make it the day before.  My kids do not like the nuts, so leave them out.

Fruit Pizza

Now is when all the berries are so delicious.  This is a wonderful dessert that is easy and pleases everyone.  My youngest had a hard time resisting all the cut up berries and kiwi I had ready for the pizza.  He said it was like a fruit buffet.  He loves every kind of fruit and this is one of his favorite desserts, besides just sitting and eating the fruit by itself.

Fruit Pizza

1 roll of Pillsbury sugar cookie dough
8oz. cream cheese
1/2 cup sugar
Assorted cut-up fresh fruit.  I used Blueberries, raspberries, blackberries, strawberries, and kiwi

Cut the cookie dough into cookie slices, spread over the lightly greased jelly roll pan or pizza pan.  Using your fingers press together the slices to form a dough. Bake at 350 degrees for 10-15 minutes (lightly browned).  Cool completely.
Mix together the cream cheese and sugar well.  Spread this mixture evenly over the cooled cookie, leaving a little edge for a crust.  Arrange assorted cut-up fruit as desired.
