Ice Cream Jello

Ice Cream Jello

2 boxes of strawberry jello
1 cup of boiling water
1 2# can of crushed pineapple and juice
1/2 cup nuts (optional)
1 quart of vanilla ice cream (let set out to soften slightly)

Mix jello and boiling water together, then mix in the pineapple and ice cream.  Place in a 9X13 casserole dish, and place in the refrigerator to set.  It takes about 1 1/2 hours to set.  I usually make it the day before.  My kids do not like the nuts, so leave them out.

Fruit Pizza

Now is when all the berries are so delicious.  This is a wonderful dessert that is easy and pleases everyone.  My youngest had a hard time resisting all the cut up berries and kiwi I had ready for the pizza.  He said it was like a fruit buffet.  He loves every kind of fruit and this is one of his favorite desserts, besides just sitting and eating the fruit by itself.

Fruit Pizza

1 roll of Pillsbury sugar cookie dough
8oz. cream cheese
1/2 cup sugar
Assorted cut-up fresh fruit.  I used Blueberries, raspberries, blackberries, strawberries, and kiwi

Cut the cookie dough into cookie slices, spread over the lightly greased jelly roll pan or pizza pan.  Using your fingers press together the slices to form a dough. Bake at 350 degrees for 10-15 minutes (lightly browned).  Cool completely.
Mix together the cream cheese and sugar well.  Spread this mixture evenly over the cooled cookie, leaving a little edge for a crust.  Arrange assorted cut-up fruit as desired.

Vegetable Pizza


Vegetable Pizza



2 cans crescent rolls
2 lg packages of cream cheese
1 cup of Helman's mayo
1 package of Hidden Valley Ranch dry dressing (Dip)
3/4 cup finely chopped veggies:  broccoli, green pepper, red pepper, cauliflower, tomatoes,shredded carrots
1 package of finely shredded "fancy" sharp cheddar cheese

On a cookie sheet take all the crescent roll and press together on the cookie sheet for a crust.  Bake the crust in a 350 degree oven for 8-10 minutes.  When cooled, Mix together the cream cheese, mayo and dry ranch dip mix.  Spread on baked crust.  Then top with the veggies, and cheese.

Very Ritzy Chicken






Very Ritzy Chicken
4 boneless skinless chicken breasts
1-2 eggs lightly beaten
1 cup Italian bread crumbs
4 slices of Mozzarella cheese ( or shredded will do)
1/2 pint heavy cream / whipping cream
1/2 Parmesan cheese
2 Tablespoons parsley


Dip chicken into beaten eggs, then coat with bread crumbs.  Brown chicken in a skillet untiil lightly golden.  Put chicken into a 9X13 baking dish.  Top each breast with a slice of Mozzarella cheese or a handful of shredded Mozzarella.  Mix together the whipping cream and the Parmesan cheese in a sauccepan and cook until mixture gets hot and thickens.  Pour mixture over the chicken breasts.  Bake covered in a 350 degree oven for about 40 minutes.

Pasta Salad

Pasta Salad

1/2 green pepper diced
5 carrots (sliced and cooked)
1 small onion finely diced
1 cup sharp cheddar cheese cubed
8 oz of Rainbow Rotini cooked

Dressing:

1 cup sugar
1/2 cup oil
3/4 cup vinegar

Mix everything together.  It is best to make this a day before serving and place in the refrigerator.  Stir before serving.

7 Layered Salad

7 Layered Salad
1 13X9 glass pan or large bowl
2 heads Iceberg Lettuce chopped
1 cup green pepper chopped
1 medium onion finely chopped
1 cup frozen peas (uncooked)
Boil 3-4 eggs cut into pieces or slices
8-10 slices of bacon crisp and broken into small pieces (or Bacon Bits)
8 oz of shredded Sharp Cheddar cheese
You may also add water chestnuts, red pepper, mushrooms, etc...

Dressing:
1 1/2 cup Miracle Whip
1/2 cup Hartville Sweet and Sour dressing
2 Tablespoons sugar

Cover bottom of container with lettuce.  Add peppers,onion,peas,eggs,chestnuts,mushrooms,etc..Spread dressing over the above items.  Then add shredded cheese, and bacon.  Make up a day before serving.

Cottage Cheese Salad - "Strawberry Fluff"



1 small can of crushed pineapple - drained
1/2 cup of mini marshmallows
1 16 oz cottage cheese
1 8oz cool whip
1 3 oz pkg of jello
4-5 strawberries chopped into pieces

In a container mix jello powder and drained crushed pineapple.  Add the cottage cheese, marshmallows and strawberries and bend together.  Fold in the cool whip.  Let refrigerate overnight.  If you are watching your calories you can use sugar free jello, cool whip lite and reduced fat cottage cheese.
