Breakfast Casserole

This is a wonderfully simple casserole to make for a special weekend family breakfast or when you are having guests over for a lovely brunch.  Just serve with some hash browns and a cup of coffee or tea.







Breakfast Casserole
4 slices of bread (any kind)
1/2 lb bulk sausage
1 cup grated cheddar cheese
9 eggs
2 cup milk
1 tsp mustard
1 tsp salt
dash of pepper
chopped green pepper and onions (optional)

Tear bread into pieces and place in the bottom of a greased 9X13 dish.  Brown and drain sausage.  Place browned crumbled sausage on top of bread pieces.  Sprinkle green pepper and onions on top.  Sprinkle cheese over top of the sausage, green pepper and onions.  Beat eggs, milk, mustard, salt and pepper.  Pour over the mixture in the dish.  Bake in preheated 350 degree oven for 35-40 minutes.  This can be prepared the night before and refrigerated overnight.
