Baked Oatmeal




Baked Oatmeal


  • 3 cups rolled oats
  • 1 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup melted butter
  • 2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract.  Spread into a 9x13 inch baking dish.
  3. You may add anything additional you like ie.  walnuts, cranberries, etc.  I peeled and cut up small bites of apples and it was delicious.
  4. Bake in preheated oven for 40 minutes. You may cut it into squares or scoop it out.

  1. Becky, does this turn out more like a cake then? I think we would like this! Adding the apples or some golden raisins/walnuts would make it even more yummy! Thanks for sharing!

  2. You can cut it like a cake or scoop it out, your choice. We like to scoop it. If I would have cooked it a little longer it would have been stiffer to cut like cake.
