Cream of Cucumber soup

Cream of Cucumber Soup

3 T butter melted 
2/3 cup diced onion
1/3 cup celery
3 cups diced peeled cucumbers
Saute about 5 minutes on low heat
Blend in 3 T flour
Add 3 cups chicken broth
Bring to a boil
Season with salt,pepper and thyme
Simmer 20 minutes
Add 1 cup of evaporated milk (1 whole can)
May add any meat or vegetables to it.  This time I added carrots, cauiflower

Bran Muffins


This is an excellent heart healthy recipe.  These muffins are loaded with fiber.  An increase in your dietary fiber will lower your cholesterol.  They are easy and delicious, an excellent back to school breakfast.

Hot Ham & Cheese Sandwiches











This is a super easy and delicious meal to have anytime.  It is great to make ahead of time, refrigerate and pop them in the oven when needed.  Perfect for a quick meal after church on Sunday night, or for a large party.  I have made 30 sandwiches before and put them all in the oven and it was a perfect party meal.




Hot Ham & Cheese Sandwiches
1 dozen buns
1/2 lb oleo (at room temperature)
3 Tablespoons poppy seed
2 teaspoon Worchestreshire sauce
3 teaspoons mustard
2 lb ham from the deli
1 lb swiss cheese (thinly sliced)

Mix together the butter, poppy seed, Worchestershire, and mustard.  Spread this on both sides of the buns.  Layer some ham and then swiss cheese.  Wrap each individual sandwich in aluminum foil.  Place all sandwiches on a cookie sheet and bake in a 375 degree oven for about 15 minutes.

Rancho Beans



Rancho Beans
1 1/2 lb. Hamburg
2 cups onions chopped
1 can kidney beans
1 can pork n beans
1 can great northern beans
1/2 cup white sugar
1 Tablespoon mustard
1 cup ketchup

Saute together the hamburg and onions until hamburg browned, and drain any grease.  Mix everything together and bake covered for 1 hour in a 350 degree oven.

Dirt Pudding

Dirt Pudding
2 cups milk
1-5.9oz jello instant chocolate pudding (that's the larger box)
2 -  8oz cool whips
1 package of oreo cookies (crushed)



Milk the pudding and milk for 2 minutes.  Fold into the pudding the cool whip and 2/3 of the crushed oreo cookies.  Top the bowl with the remaining crushed oreos.  Make the day before and put into the refrigerator.

Baked Rigatoni





Baked Rigatoni

1 -  12 or 16 oz box of Rigatonis
1 jar of spagetti sauce
1/4-1/2 pound of pizza size pepperoni
1 bag of shredded Mozzerala cheese
1 pound of lean hamburger
chopped green peppers and onions (optional)

Brown hamburger in skillet, and drain.  Cook rigatoni noodles in water until done.  Drain rigatoni in a strainer.  Combine rigatonis, browned crumbled hamburger, and spagetti sauce.  Layer the mixture in a casserole.  Sprinkle a layer of green pepper and onions if you'd like.  Tuck in a  layer of pepperonis in the rigatonis.  Sprinkle a layer of mozzerala cheese.  Then continue to layer the casserole with Rigatoni mixture, pepperonis and shredded cheese.  Cook covered for about 35 minutes in a preheated 350 degree oven.

Ice Cream Jello

Ice Cream Jello

2 boxes of strawberry jello
1 cup of boiling water
1 2# can of crushed pineapple and juice
1/2 cup nuts (optional)
1 quart of vanilla ice cream (let set out to soften slightly)

Mix jello and boiling water together, then mix in the pineapple and ice cream.  Place in a 9X13 casserole dish, and place in the refrigerator to set.  It takes about 1 1/2 hours to set.  I usually make it the day before.  My kids do not like the nuts, so leave them out.
