Crock Pot Chicken and Dumplings


Crock Pot Chicken and Dumplings

1 can Cream of Chicken Soup (undiluted)
1 can chicken broth
2 boneless skinless chicken breasts
1 container of refrigerator biscuits 

Combine the cream of chicken soup, chicken broth and 2 chicken breasts in crock pot and cook on high approximately 4-5 hours. You can put the chicken in frozen it will just add to the liquid. For my family I use 4 chicken breasts, 1 can cream of chicken, 2 cans chicken broth, 2 chicken boullins, and 2 rolls of the refrigerator bisquicks. About it cooks for approximately 5 hours then add the bisquits. Cut the bisquits into quarters or halves, then gently press the bottom of them into the liquid. Make sure you have enough liquid because the dumplings will absorb it.

Baked Oatmeal




Baked Oatmeal


  • 3 cups rolled oats
  • 1 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup melted butter
  • 2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract.  Spread into a 9x13 inch baking dish.
  3. You may add anything additional you like ie.  walnuts, cranberries, etc.  I peeled and cut up small bites of apples and it was delicious.
  4. Bake in preheated oven for 40 minutes. You may cut it into squares or scoop it out.

Cream of Cucumber soup

Cream of Cucumber Soup

3 T butter melted 
2/3 cup diced onion
1/3 cup celery
3 cups diced peeled cucumbers
Saute about 5 minutes on low heat
Blend in 3 T flour
Add 3 cups chicken broth
Bring to a boil
Season with salt,pepper and thyme
Simmer 20 minutes
Add 1 cup of evaporated milk (1 whole can)
May add any meat or vegetables to it.  This time I added carrots, cauiflower

Bran Muffins


This is an excellent heart healthy recipe.  These muffins are loaded with fiber.  An increase in your dietary fiber will lower your cholesterol.  They are easy and delicious, an excellent back to school breakfast.

Hot Ham & Cheese Sandwiches











This is a super easy and delicious meal to have anytime.  It is great to make ahead of time, refrigerate and pop them in the oven when needed.  Perfect for a quick meal after church on Sunday night, or for a large party.  I have made 30 sandwiches before and put them all in the oven and it was a perfect party meal.




Hot Ham & Cheese Sandwiches
1 dozen buns
1/2 lb oleo (at room temperature)
3 Tablespoons poppy seed
2 teaspoon Worchestreshire sauce
3 teaspoons mustard
2 lb ham from the deli
1 lb swiss cheese (thinly sliced)

Mix together the butter, poppy seed, Worchestershire, and mustard.  Spread this on both sides of the buns.  Layer some ham and then swiss cheese.  Wrap each individual sandwich in aluminum foil.  Place all sandwiches on a cookie sheet and bake in a 375 degree oven for about 15 minutes.

Rancho Beans



Rancho Beans
1 1/2 lb. Hamburg
2 cups onions chopped
1 can kidney beans
1 can pork n beans
1 can great northern beans
1/2 cup white sugar
1 Tablespoon mustard
1 cup ketchup

Saute together the hamburg and onions until hamburg browned, and drain any grease.  Mix everything together and bake covered for 1 hour in a 350 degree oven.

Dirt Pudding

Dirt Pudding
2 cups milk
1-5.9oz jello instant chocolate pudding (that's the larger box)
2 -  8oz cool whips
1 package of oreo cookies (crushed)



Milk the pudding and milk for 2 minutes.  Fold into the pudding the cool whip and 2/3 of the crushed oreo cookies.  Top the bowl with the remaining crushed oreos.  Make the day before and put into the refrigerator.
